In 2008, at age of 24, Travis Hester opened up a food truck on Military road in Benton, Arkansas. He named it EatMyCatfish.com. There were early successes and pitfalls too. At the ribbon cutting for the food truck, he ran out of fish in just one hour. However, his determination and family recipes gave him a great deal of success.
In the spring of 2009 Travis added crawfish to the menu. Being the only place with crawfish in the area, this quickly became the spiciest (and best) item on the menu.
With three and half years of experience with the food truck, Travis believed it was time to open a brick and mortar restaurant. Eat My Catfish of Benton opened January 2012, right across the street from the original trailer.
Business thrived and in just a year and a half Travis expanded, opening Eat My Catfish of Conway. Shortly after Conway’s success, the time came for a third grand opening in Little Rock. Eat My Catfish has since become a staple throughout central Arkansas.
Eat My Catfish now operates three dine-in restaurants and has two on-site catering trailers. They catered over 350 events last year and sell more live and cooked crawfish than anyone in Central Arkansas.
Though the slow days of sitting in a food truck have been replaced by lively Friday nights, Travis always makes time chat with his original customers. He still values those early connections.
