Travis:
All right. It’s the moment we’ve all been waiting for, or at least I’ve been waiting for. Episode number one of the Homegrown Highway. And for this first episode, we’re headed back to our roots, Saline County, to feature Twisted Fries. And there were several reasons why we picked Twisted Fries, but we had a lot in common. We both started in a food truck in Saline County. We both have really cool, inspirational stories behind why we do what we do. And it’s just, I can’t wait for you to meet Adam and see his really cool food dishes that he creates. And our challenge this week, it’s going to be real interesting to see what he comes up with. But it’s snow crab and our signature Willie Dust, so I can’t wait to see what he creates. He’s a super innovative guy. So let’s go out there and meet Adam and see what he’s got to offer.
Travis:
All right. What you got to love about food truckies, like I ought to call food truckies, is they are extremely ambitious. So we were driving around showing Zach to this lot where we first started, we started to drive off and this guy is working this food truck gets really sketched out because we’re taking videos of it. And he walks up really intimidated, he probably thinks we’re the Health Inspector and we rolled down the window and that’s when we cut it off, but-
Bobby :
Okay. Okay. So ain’t in no trouble am I?
Travis:
No, no.
Zach:
No, no, no.
Travis:
We told him that we were just filming the first episode of Homegrown Highway. And anyway, going back to the adventure of food truckies, he asked if we wanted to try his food. So he’s bringing out some, I think he said some garlic butter spicy shrimp, which sounds awesome. May need to feature him and get the recipe. But look forward to try this. I didn’t get the guy’s name, but we’ll stay tuned for that. All right, man. Hey, what’s your name?

Bobby:
Bobby Loc’s Seafood and Smokes.
Travis:
I love it, man. I love it. What kind of seafood you do?
Bobby:
I do crab legs, shrimp, boudin and red beans.
Travis:
Man.
Bobby:
Yes, I do a lot stuff, man.
Travis:
We may have to feature you next, man.
Bobby:

We’re featuring different food trucks and just try and promote them.

We didn’t know water a lot back in the day. Man. That’s good looking stuff there. All right, here we are. I got the challenge ingredients for today. I got some snow crab, some Willy dust. I wonder what kind of fries he’s going to whip up with this. Let’s go over here and meet Adam real quick. He just got here in his truck. Actually came to the Benton store. Adam, my friend, how are you, bud?
Adam:
What’s up, man? Good to see you, Travis.
Travis:
Good to see you. I got the challenge ingredient. I can’t show you what it is.
Adam:
All right.
Travis:
I know you’re going to be able to handle it.
Adam:
Kind of smell maybe what it is.
Travis:
Uh-oh.
Adam:
Smells pretty good.
Travis:
Yeah, smell fishy?
Adam:
A little bit. A little bit.
Travis:
All right. So tell me what is Twisted Fries?
Adam:
Twisted Fries is a food truck that specializes in nothing but loaded fry options. We’ve got about 15 different options, everything from pulled pork fries. We’ve got a Philly cheese steak fry. Buffalo chicken fries, you name it, we can put it on a fry.
Travis:
Serious, man. I looked online, there’s so many creative things and that’s the reason I wanted to bring something a little outside of the box here to see what you can do.
Adam:
Okay.
Travis:
All right, so I hear there’s big news going on.
Adam:
There is news, yes.
Travis:
What is on the horizon?
Adam:
We have a brick and mortar that’s about to open in Bryant. It is not Twisted Fries. You will find some fries on the menu, but it’s called Copper Mule Table and Tap.
Travis:
Oh, wow.
Adam:
It’s a Southern and Creole theme.
Travis:
I like where you’re going with this.
Adam:
Yeah.
Travis:
You know we like some Creole food.
Adam:
Oh, yeah.
Travis:
So, you ready to see this?
Adam:
I’m ready.
Travis:
How about some snow crab fries. You think you can do it?
Adam:
Oh man, that looks good.
Travis:
Now I know how to crack these things, if you need some help cracking and I can help in there a little bit.
Adam:
Okay.
Travis:
But I want to see what you can whip up and of course you got the Willie Dust, all right.
Adam:
Never done seafood fries before, but let’s give it a shot.
Travis:
Yeah, let’s do it. Just try that right there, because we boil it in some Willie Dust and so it’s got a little spice to it. So what are you thinking on these fries? No, actually try that first.
Adam:
Man, that’s good. Good and tender and flavorful, man. Wow. Yeah, I like that a lot. Well, you know everything we do on here is loaded fries so I guess today we’re doing loaded crab fries.
Travis:
Heck, yes.
Adam:
I’ve got some garlic aioli that we use on a couple of other dishes, think about incorporating that.
Travis:
Like it.
Adam:
Couple veggies and maybe a queso fresco.
Travis:
Whew.
Adam:
So while the fries are cooling, let’s take some this crab meat over here to the prep table and let’s dice it up a little bit. Get this pan good and hot and then we’ll saute up this crab meat in a little bit of your Willie Dust.
Travis:
Hey Adam, what’s that over there?
Adam:
Let’s dress these bad boys up. A little garlic aioli, some more crab meat right on top. Queso fresco in here. This is just a Mexican crumbling cheese, what it is. A bit of cilantro on here.
Travis:
Oh, I love the fresh cilantro. Oh man, I love it.
Adam:
And then a little green onion on here. We’re going to put the green and some of the white parts on there, too.
Travis:
Love it.
Adam:
And then it ain’t crab without the lemon. Boom, there you go. Bam, loaded crab fries.
Travis:
Is it my turn?
Adam:
Yeah.
Travis:
All right. All right. All right.
Adam:
Go for it.
Travis:
Come on.
Adam:
Dig in.
Travis:
Let’s try these things out.
Adam:
Get you a fork. I mean you better hurry, or I’m about to dig in.
Travis:
Oh man. Get you a bite of that.
Adam:
All right. I’m not going to use a fork.
Travis:
Oh, you make me use a fork. Dude, that is unreal. That lemon. I didn’t know what you’re doing with that lemon. That lemon, the aioli, little bit of spice. Man, that’s good.
Adam:
That’s pretty tasty. What do you think, new menu item for the truck? Or new menu item here?
Travis:
Both, why not?
Adam:
Partnership.
Travis:
Call this the Twisted Willie.
Adam:
There you go.
Travis:
These fries are ridiculous. I hope every episode is this good, because we can just keep doing this. I can quit my day job. We just go around and film stuff. I don’t care if anybody watching it.
Adam:
There you go.
Travis:
I just want to try innovative stuff like this. This is so creative and best of luck on your new restaurant.
Adam:
Hey man, I appreciate it.
Travis:
So you were a customer of ours over there. You bought a lot of our crawfish.
Adam:
Oh yeah, oh yeah.
Travis:
And I’ve always said that those first few customers, we remember more than the ones we have now, just because they made such an impact on our business.
Adam:
Yeah.
Travis:
And so, we’re thankful for you, for making an impact on us and we hope our fans out there will go like Adam’s page, go to his new restaurant, share this video, get this guy, open the doors and blown it out of the water right out of the gate. Be his motivation, just like Adam was for us when we were in a food truck. But support the local foodies out there, all of them need it right now. But again, Adam, we can’t thank you enough for getting us on this truck today, bringing back some memories and cooking some really awesome fries, man.
