It’s that time of season again y’all, CRAWFISH! How many times during the winter did you visit one of the Eat My Catfish locations and inquire, “Do y’all have crawfish yet?” or “When are y’all getting that crawfish in?” Well now is the long-awaited time!
Eat My Catfish is single handedly the top seller of mud buddies in central Arkansas, which is not a small feat. During the 2017 mud bug season, Eat My Catfish received a total of approximately 180,000 pounds of crawfish – that is somewhere between the weight of an Arkansas water tower, and a United States space shuttle!
This year, we really started going full speed with the crawfish around the end of January. Now, almost two months later, the crawfish range in sizes from three inches to five inches, and taste absolutely delicious. We boil them in our ever-famous original Willie Dust seasoning (available for $3.99 a canister, or $8.00 four-pound bag), for a total of two and a half to three minutes, until they turn that brilliant red that signals they are ripe for the eatin’! Then, depending on your preference, we either toss them in even more Willie Dust, for that kickin’ flamin’ taste, or serve them straight from the pot for a milder heat! Pair all of this with some corn on the cob, boiled red potatoes, and spicy sausage, and you have a mouthful of unforgettable southern flavor!

Travelin’ for the Muddies
Throughout the season, it is often necessary for us at Eat My Catfish to make the trip south to restock fresh crawfish for you! Recently, we visited the farms to retrieve loads of these little guys, and it is always a pleasure to learn and appreciate the origin of the critters. On one of our trips this January, we ended up in a hurried trip racing against Louisiana snow and ice storms to bring these mud buggies home!
